Using cooking spray, coat the muffin pan or use muffin liners.
Combine dry ingredients in a medium bowl.
In a separate bowl combine all the wet ingredients until they are well mixed.
Pour the wet ingredients into the dry and fold until just combined. Do not over mix.
Gently fold in BRACH’S® Speckled Jelly Bird Eggs & white chocolate chips
Spoon the batter evenly into each section of the muffin pan.
Bake in the oven for 7 minutes at 400 degrees F then reduce the heat to 350 degrees F and bake for 15-20 min.
Allow muffins to cool for 5 minutes in the pan, then remove and cool completely on a wire rack.
While muffins are cooling, whisk together ½ cup powdered sugar and 1 tablespoons of water, adding the water gradually until the mixture is a loose frosting. Add pink food coloring and stir. Drizzle frosting over the tops of the cooled muffins and allow to set.
