Star Brites® Peppermint Mousse

Ingredients
¼ cup sugar
2 ½ Tbls cornstarch
1 large egg
1 ½ cup 1% low fat milk
30 Brach’s® Star Brites® Peppermint candies (crushed) + 6 whole mints for garnish
2 cups frozen whipped topping, thawed (about 2/3 of an 8 oz tub)
Mint leaves for garnish
Directions
To crush peppermints, place unwrapped mints in heavy duty resealable bag and smash with meat mallet or hammer. Set aside.
In medium saucepan, whisk sugar, cornstarch and egg.
Slowly whisk in milk and then crushed mints.
Bring to boil, gently stirring bottom of pan. Boil 2 minutes, whisking constantly until thickened.
Pour mixture into medium bowl and cover surface directly with plastic wrap to prevent a skin from forming.
Refrigerate 2 hours or until cold then fold in the whipped topping. Garnish with whole peppermints and mint leaves.
